A quick delicious meal (vegan)

Here's a quick recipe suitable for vegetarians and vegans. No quantities given. This is cooking on the hoof.

Stuffed Peppers


  • Cut length ways two or more peppers (any colour) and de-seed. 
  • Put them in the oven on Gas Mark 6 drizzled in oil until they soften.
  • Meanwhile, cook enough Elby (a wonderful grain alternative to rice) for however many you are cooking for and drain. 
  • Take a sachet of Nando's Peri Peri Rub (Medium) and pour in half the packet (for two) or the whole lot (for four) and stir through the Elby with a blob of olive oil. 
  • Take the peppers from the oven and divide mixtures between them and return to the oven for a while. 
  • Serve with a green salad.


You can add anything to this mixture - some peas or sweetcorn, tomatoes. Go for it and experiment.
This is idea comes to you from my son who suggested it and I cooked it! It has kick! Enjoy! (He had me slicing Halloumi cheese and frying it to serve alongside his peppers as a vegetarian meal)
